I love this recipe for so many reasons; it’s simple, tastes great, easy, and a great way to use tomatoes even if they are not in season. I serve these as a side to a savory breakfast. They go great with a quiche or frittata, or when I do my baked pesto eggs. Feel free to use a variety of tomatoes such as Cherry, Zima, and other colors for a beautiful pop of color on the plate. If you like tomatoes you will love this recipe. It’s been a guest favorite and goes great for breakfast or brunch.
Rinse and drain the tomatoes then cut in half and put in a small or medium mixing bowl.
Add the other ingredients and then toss and set in the refrigerator for at least 45 minutes.
After about 30 minutes try one to measure the overall flavor. If it’s too salty add a bit more sugar. If they are too sweet add a bit more salt or pepper or vinegar. You can always add more flavor if needed.
Notes
I put my Apple Cider Vinegar in a small spray bottle and spray it on the tomatoes. I find I have better control of the amount of vinegar. I also put sugar in a spice bottle with a shaker lid and shake it on for the same reason.
