MARINATED GRAPE TOMATOES - ELMS OF CAMDEN
I love this recipe for so many reasons; it’s simple, tastes great, easy, and a great way to use tomatoes even if they are not in season. I serve these as a side to a savory breakfast. They go great with a quiche or frittata, or when I do my baked pesto eggs. Feel free to use a variety of tomatoes such as Cherry, Zima, and other colors for a beautiful pop of color on the plate. If you like tomatoes you will love this recipe. It’s been a guest favorite and goes great for breakfast or brunch.
Ingredients
- 1 container Cherry Tomatoes
- Apple Cider Vinegar
- Dill
- Salt
- Ground Pepper
- Sugar
Instructions
- Rinse and drain the tomatoes then cut in half and put in a small or medium mixing bowl.
- Add the other ingredients and then toss and set in the refrigerator for at least 45 minutes.
- After about 30 minutes try one to measure the overall flavor. If it’s too salty add a bit more sugar. If they are too sweet add a bit more salt or pepper or vinegar. You can always add more flavor if needed.
Notes
I put my Apple Cider Vinegar in a small spray bottle and spray it on the tomatoes. I find I have better control of the amount of vinegar. I also put sugar in a spice bottle with a shaker lid and shake it on for the same reason.
